This August, Maíz de la Vida will continue its Ni de Aquí Ni de Allá guest chef series with a special collaboration between Chef Julio Hernandez and Chef Alam Méndez, co-founder of Washington D.C.’s Apapacho Taqueria who runs it with his wife, pastry chef Elisa Reyna. Known for its thoughtful approach to Mexican street food, Apapacho reflects Méndez’s deep appreciation for nixtamalization and the cultural traditions behind each dish, much like local star Julio Hernandez. Raised in Oaxaca, Mexico working in the kitchen alongside his mother, the renowned Chef Celia Florián of Las Quince Letras, Méndez went on to study at the Instituto Culinario de México before working in some of the world’s finest Michelin-starred kitchens, including Arzak and Can Fabes to name a few.
